Healthy Breakfast : Two Ingredient Banana Pancakes (makes 4 – 5 small pancakes)

Ingredients

* 2 whole eggs

* 1 medium ripe banana

What you do:

* Peel and mash the banana with hands or a fork until its smooth (no lumps), set aside.

* In a separate bowl use a fork to beat together the two eggs.

* Combine the eggs and banana, mixing well. If mixture too runny, you can add a little flour to thicken it.

You can also add any desired extras at this stage (optional extras listed).

* Heat a non-stick or use a teaspoon of oil/butter to grease a pan.

* Reduce the heat to a medium-low level (be careful the pancakes can easily burn).

* Pour a circle of batter into the pan (about 2 tablespoon of batter per pancake)

* Cook until golden brown on the underside (around 1 minute ) then use a spatula to flip and cook until golden brown on the other side (30 seconds to 1 minute).

Optional Extras

* 1/8 teaspoon cinnamon

* ½ cup oats

* ¼ teaspoon vanilla extract

* 1 teaspoon or so of peanut butter

* 1/8 teaspoon of baking powder (if you like your pancakes fluffy).
