THIS Sunday, April 20, Suva’s Grand Pacific Hotel will host Harbour Lights – A Coastal Culinary Odyssey – a one-night-only fire-fuelled dining experience that brings together world-class culinary creativity and the essence of Fijian hospitality.
Leading the collaboration are renowned Australian chef Adam Liston and hospitality consultant Nate Scutter, whose fire-driven approach to cuisine has earned acclaim across Australia’s finest restaurants.
At Grand Pacific Hotel, they’ve joined forces with Executive Chef Kanokwan Imprasittichai and the hotel’s talented culinary team to deliver an elevated evening of open-flame cooking, refined coastal flavours, and beautifully balanced dishes.

Set under the stars at Na Toba, the event invites guests to gather around a pop-up marketplace-style harbourside setting and enjoy a curated menu that tells a story of flavour and fire. From delicately smoked seafood and char-grilled meats to vibrant vegetarian creations and indulgent desserts, every element is designed to showcase both technique and terroir.
Signature highlights from Adam and Nate include kokoda shots with spicy miti dressing, Thai chicken kofta grilled live on lemongrass skewers, and a piña colada cheesecake with a sesame biscuit base. These sit alongside an exceptional array of dishes co-created with Chef Kanokwan Imprasittichai, Executive Pastry Chef Samuel Hutabarat, and the GPH Culinary Team – think crispy whole fish with lemongrass and cashew, mussels in pineapple curry, prawn nasi goreng, cheesy stuffed eggplant, and a finale of triple chocolate mousse and warm date cake.
