Nanuku Resort Fiji has announced the appointment of its new executive chef Shaun Thomson. Chef Thomson’s career began under chef Neil Perry at Melbourne’s famed Rockpool Bar & Grill in Australia.

His quest for culinary adventure led him to Sydney and Fiji, where he collaborated with famed chef Peter Kuruvita at Flying Fish, known for its seafood mastery.

Returning to Melbourne chef Thomson earned his own Chef’s Hat at the Lola Restaurant in Ballarat.

Chef Thomson’s second stint in Fiji saw him as head chef at Kokomo Private Island Fiji, mentored by chef Cory Campbell, previously of Noma and Vue du Monde fame.

Before joining Nanuku Resort, chef Thomson helmed the culinary team as executive chef at the luxurious Ungasan villas in Uluwatu, Bali, including the exclusive Sundays beach club.

Chef Thomson’s culinary ethos centres on local produce and traditional techniques, reflecting the vibrant South Pacific flavours.

He’s set to take Nanuku Resort’s award-winning cuisine to new heights, promising exceptional dining experiences.
