In an effort to pursue world-class accreditation with APEX, Fiji Airways is pursuing a new approach, part of which is the introduction of a new Pacific Rim cuisine menu.
The menu celebrates Fiji’s unique location and uses locally-sourced, sustainable and organic ingredients from Fiji and the Pacific Rim region.
At a media gathering last week, purser and world class trainer Elayna Gibson said the new menu would give guests a diverse range of flavours and dining experiences because they are getting to taste cuisines and cooking styles from all over the Pacific Rim.
Training for the new service concept includes a hands-on galley workshop where crew members plate meals with trainers.
“Normally, when we get a new meal cycle, we just get pictures of what the meals should look like when they’ve finally been plated,” she said.
“But to be there plating with the trainers is a whole new concept.
“We can see in the delivery on board how the meals have elevated standards, and consistency is there because of this training experience.”
Ms Gibson said another feature, currently available in business class, is “soft dine on demand”.
“This allows passengers to order any menu item at any time during the flight.
“If it’s a late departure at night and you want breakfast, by all means, we can serve you breakfast. Halfway through the flight, if you want to have your full dinner, we can make that happen for you.”
Ms Gibson said the concept had been very popular with guests.
