The Grand Pacific Hotel (GPH) in Suva played host to Texas’ most celebrated Chef Greg Pawlowski, as a way to commemorate Fiji Airways’ newest route connecting Dallas to Fiji on Tuesday night.
Mr Pawlowski known for his innovative techniques and deep appreciation of Texan cuisine, crafted a menu that paid homage to the spirit of Texas while celebrating Fiji’s fresh local ingredients.
Texan dishes such as slow-smoked BBQ brisket, Tex-Mex Street tacos and desserts like Mississippi Mud Pie were some of the menu highlights for the night.
Lachlan Walker, portfolio general manager — IHG Hotels & Resorts, FNPF owned hotels, which include Intercontinental, Holiday Inn and GPH, said they wanted to spread that great news of the new route through celebration of great Texan food at both the Natadola and Suva hotels.
“I got an amazing peach cobbler which is courtesy of the distillery, great local spirit and the event this evening is to celebrate the launch of the Dallas flights on December 13,” Mr Walker said.
He said there were similar events lined up to host guest chefs and Master Chefs in December specialising in Indian cuisine and another in January next year with a chef from Adelaide to showcase African delicacies and he looked forward to their execution.
GPH’s newly appointed general manager Robert Clark said it was special to bring someone in to share skill sets not commonly found in the country.
“Cooking in a different style has been very interesting not only for us but also our local team who have seen and learnt new things so, it’s been really loads of fun and laughter in the kitchen,” Mr Clark said.
Mr Pawlowski expressed gratitude for the event and said he has had a wonderful time since his arrival.
“I am from Dallas where there is a direct flight that’s just waiting to take off, and to celebrate that, I have brought some of our local dishes, so it’s exciting,” Mr Pawlowski said.
The event was part of the broader IHG initiative to celebrate the accomplishment at the InterContinental Fiji Golf Resort & Spa and then to Grand Pacific Hotel.
